i've baked a few delicious treats during april. here are some of my favorites...
soft pretzel bites from king arthur flour. {this is my favorite flour. although you can buy their flour in your local grocery store...their catalogs are like eye candy and your order comes in the happiest boxes. ever}. |
 |
blueberry lemon baked donuts. these are heavenly. the recipe is from recipe rebel. |
 |
whole wheat artisan bread. this delicious bread is from healthy breads in five minutes a day...one of my favorite baking books. seriously. it is awesome. i make a large container of dough - keep it in the fridge - and pull out about a pound each time i want to make fresh bread. {warm baguettes at dinner time are a favorite around here}. |
 |
banana chocolate chip donuts with chocolate glaze. can it get any better? i surprised my kids with these after school one afternoon. {sorry. i can't find this recipe. anywhere}! |

 |
and finally... banana chocolate chip muffins with cream cheese frosting. this has been in my recipe archives for twenty years. with or without the frosting...muffin or bread...they are always devoured.
1 cup sugar
1/2 cup melted {cooled} butter
1 cup mashed bananas {about 2}
2 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup milk
dash of salt
1 teaspoon vanilla
1/2 cup milk chocolate chips
preheat oven at 350 degrees.
cream together sugar, butter, and bananas. add remaining ingredients and stir until well mixed. pour into well greased loaf pans or muffin pans. {yields two loaves or 24 muffins}.
bake for 30-40 minutes...until golden in color and toothpick comes out clean.
let cool and frost {if desired} with cream cheese frosting:
1/2 cup butter - room temperature
8 oz cream cheese - room temperature
1 teaspoon vanilla
1 pound powder sugar
mix well. frost with butter knife or piping bag. sprinkle with chopped chocolate. |
enjoy!
{all pictures taken by me}.
